Mediterranean Sprout Salad

Salads are amazing. They make you feel bright, light, and vibrant.

This one will not disappoint. The flavor combination is mostly raw but the tender marinated bits make it seem indulgent and well dressed. 

Ingredients: (for 2 Large Salads)
+ 4 cup baby Spinach
+ 2 cup Spicy Onion Sprouts
+ 1 cup Marinated Mushrooms, halved (with a bit of the liquid as dressing)

+ 2 Yellow Carrots, finely sliced
+ 1 cup Legume Sprouts
+ 1/2 cup Castelvetrano Olives, pitted
+ 1/2 cup Raw Sunflower Seeds



Mix all the ingredients together. Eat. Enjoy.

Castelvetrano olives are my jam. Seriously. I might even make an olive jam recipe. That good. You can find them in most stores at the olive bar or jarred.
