Shredded Veggie Sandwich

Shredded Veggie Sandwich

Ingredients: (for 2)

+ 4 slices Toast of choice
+ 2 cup Shredded Veggie Mix (kale, cabbage, red onion, carrot, golden beets)
+ 1/2 Avocado, sliced
+ 1/2 cup Alfalfa Sprouts
+ 4 tbsp Raspberry Jam
+ 2 tbsp Salsa Verde
+ 2 tbsp Vegenaise
+ Pinch Salt

 

Instructions:

Place the slaw in a ziplock bag with the salt, salsa verde, and vegenaise. Close the bag and shake well to combine all the ingredients. Let sit ~5 minutes to soften the veggies. 

Spread the jam on 2 slices of toast and mash the avocado on 2 slices. 

Top 2 slices with the veggie filling and sprouts. Top with the other toast.
