Sure I try cauli products here and there… but the best cauliflower product, is well, CAULIFLOWER! Yes, the actual whole food vegetable. I know, crazy. While at Trader Joes searching for the newest autumn items (gluten free pumpkin bagels!!!), I came across BABY cauliflower. Of course I had to buy it and use it immediately. With summer not quite willing to leave, the 80 degree temps begged for a light, vegetable forward grilled meal.
1/2 pound Baby Cauliflower florets
1/2 Red Onion, halved
6 Fresh Figs, halved
Salt and Pepper
Sprig of Rosemary
1/4 cup Crumbled Goat Cheese
1/4 cup Marcona Almonds, chopped
Toss the vegetables in a generous amount of olive oil. Add salt, pepper, and the rosemary. Dump the mixture into a grilling basket (or directly onto your grill if you have a grate that things won’t drop through). Grill over medium heat for 5 minutes, rotate or toss the veggies, and cook another 5 minutes. Remove from heat, toss in the almonds and cheese and eat! Try over greens, or on top of rice, or as a side dish to grilled protein.
