Banana Granola Cookies

Banana Granola Cookies

Again, I use the term ‘cookies’ loosely here.

These are basically breakfast; A fruit and granola bowl baked into portable nuggets of deliciousness. If you have some granola in your pantry and a couple bananas that are too ripe for anything but baking you need to make these!



  • 2 cups Granola (I used GoRaw CocoCrunch)

  • 1 cup GF Flour (I used pamela’s )

  • 1 Egg

  • 1/2 cup Shredded Coconut, unsweetened

  • 2 Very Ripe Bananas

  • 1/2 cup Almond Butter

  • 1 tsp Vanilla

  • 1/2 tsp Salt

  • 1 tsp Baking Powder

How To:

Preheat your oven to 325. Mash the bananas in a large mixing bowl. Whisk in the egg and nut butter. Add the vanilla, salt, baking powder, and flour. Once well mixed, stir in the granola and coconut. Scoop heaps onto a parchment lined baking sheet and bake for ~10 minutes. Enjoy!
