Banana Oat Cookies
Have a ripe banana laying around? Make these ‘cookies’! They’re great for a quick breakfast, filling snack, or pre workout bite.
1 cup Sprouted Quick Oats
1 cup Dates, pitted & soaked in hot water
1 Ripe Banana
1/4 cup Coconut, Shreds (unsweetened)
1/8 cup Almond Butter
1/4 cup Almond or Coconut Milk
1/2 tsp Flakey Salt
*Optional - 1/2 cup mini chocolate chips!
Drain the dates and place in a food processor. Process until the dates are chunky and broken down, but not quite a paste. Add in all other ingredients (except the chocolate chips) and pulse until well combined. Preheat oven to 325. Line a baking sheet with parchment paper. Use clean hands to form the mix into little patties and bake for ~12 minutes. Enjoy!
