Baobab Bowl

Baobab Bowl

This bowl was inspired by my recent purchase of Baobab + Porridge Cookbook (seriously @anniskk is my IG idol) while in Encinitas, California.

This recipe is NOT out of Pørridge, but it is inspired by the books many beautiful bowl concoctions. If you have a chance, definitely check out Anni Kravi, a Finnish food stylist + recipe creator who will have you drooling over healthful whole foods.

She is one of my top food Inspos!

What's Baobab? It's a highly nutritious powder ground from the fruit of the African (among other countries) baobab tree. It is also known as the 'Tree of Life' ( Lion King?! Yeap) because of it's wonderful nutrients and ability to support life in underdeveloped and folk communities.

While it's a staple in some countries, it is a new addition to the American 'superfood world' and rightfully so. It's wild harvested, high in fiber, antioxidants, vitamin C and could support immunity. The powder form makes this easy to add into any smoothie, shake, salad, yogurt, etc...

While I was reluctant to jump on the Baobab Bandwagon, now that I'm on... Not getting off!! I love it. The flavor is a bit like maca and it easy to use and as an elite athlete, I can use any potential immunity boost I can get! Endurance athletes are always bordering the line between healthy and ill due to high levels of cortisol and insulin irregularities.

Ingredients: (2 bowls)

+ 1 1/2 cups Yogurt ( I used Amande Coconut)
+ 1 tbsp Maca
+ 1 tbsp Baobab
+ 2 Scoop Protein ( I used KLEAN Athlete Whey Protein Powder)
+ 1/2 tbsp Turmeric
+ 1/8 tsp Black Pepper
+ 1 Frozen Banana
+ 1 tbsp Coconut Oil

+ 4 Dates
+ 1/4 cup Raw Almonds
+ 1 tbsp Black Sesame Seeds
+ 2 tbsp Coconut
+ 1 tbsp Hemp Seed
+ 1 tbsp Cordycep
+ 1/2 tsp Salt

+ Coconut Strips
+ Berries
+ Bee Pollen

Pulse all 'crumble' ingredients until choppy but combined.  Remove from blender/processor. Blend all the smoothie ingredients until smooth. Pour into bowls, top with crumble and add your extras, if using.

***Notes: If using dairy based yogurt, add only 1 scoop protein.
