Zucchini Noodles & Beef

Oh the ZOODLE…. Seriously I have shunned these for a long long time. After consuming too many carb-free dishes of thin, mushy over cooked zucchini noodles, I couldn’t stand to look at them let alone eat this trendy item.

Don’t get me wrong, I love a good noodle and I am not a fan of replacing all your grain carbs with vegetables. But I also have a huge thing for raw zucchini. So I decided to revisit the ZOODLE.

There are two rules, at least for me, that make a delicious zucchini noodle: keep it raw & spiralize them thickly.



  • 1 large Zucchini

  • 1/3 cup Grass Fed Ground Beef

  • 1 tbsp Heavy Cream

  • 1 tbsp Harissa Paste/Sauce

  • 1 tbsp Golden Raisins

  • 1 tbsp Slivered Almonds

  • 1 tsp Olive Oil

  • Salt to taste

Spiralize the zucchini and set aside. In a skillet, sauté the beef in the oil until browned. Stir in the harissa and cream until cooked through. Toss the beef with the zucchini, raisins and almonds. Add salt. Enjoy!
