Healthy(ish) Cocktail

Being a serious athlete makes it difficult to imbibe. There are early wake ups, race weight, quality sleep and performance gains to focus on and alcohol is not known to help any of those things!! But I do love a good cocktail or glass of wine. I just need an extra good reason to reach for the bottle these days. 

Enter: Beet Cocktail.  

Okay, I need a more original name for this drink... please submit your suggestions in the comments below! 

Seriously tho, we all know how awesome beets are for our bodies, especially athlete bodies! (see my post on Beets for Performance).  Combining beet super nutrition into a cocktail makes it healthy right? Sure! Kind of. At least enough for me to raise a glass. 


Beet Simple Syrup:
+ 1 Medium Beet
+ 2 cups Water
+ 1/2 cup Turbinado Sugar

+ 3/4 ounce beet simple syrup
+ 2 ounce Mezcal
+ 1/2 ounce Ancho Reyes
+ 1 ounce Lemon
+ 2 Dashes Celery Bitters
+ Fresh Thyme 


To make the beet simple syrup, grate the beat into a saucepan. Add the water and sugar. Heat to a boil, then reduce and simmer ~10 minutes. Turn the heat off and let sit to allow the beet to seep into the water ~30 minutes. Strain and pour into a jar. Refrigerate.

For the cocktail, shake all the ingredients together with ice. Strain, serve over ice with extra thyme garnish.
