BKFT Tacos!

Dinner for breakfast?! Yes please. Tacos are great anytime of day!

Ingredients:

  • Mikey’s Grain Free Tortillas

  • 3 Eggs

  • 1 cup Purple Cabbage

  • 1 Scallion

  • 1 tbsp Avocado Mayo

  • pinch Salt

  • 1 tsp Sriracha

  • 1 tbsp Rice Vinegar

How To:

Heat a skillet. Add the tortillas one at a time for a minute each, flipping once. You want them to become slightly pliable but also a little charred. Next scramble the eggs. Meanwhile, mix the vinegar, salt, mayo and sriracha. Add in the cabbage and mix to coat. Add the eggs to the tortillas, top with the cabbage mixture and scallions. Dig in!
