Blueberry Zuc Muffins

Summers aren’t just for salad! These muffins are loaded with tasty summer produce, so make a batch and enjoy them for days!



  • 1 cup Coconut Kefir ( I used Lifeway)

  • 2 Eggs

  • 1/4 cup Cashew Butter

  • 1/2 cup Almond Meal

  • 1/2 cup Coconut Flour

  • 1 cup GF AP Flour ( I used Cup4 Cup)

  • 1/2 cup Olive Oil

  • 1/2 cup Blueberries

  • 1 cup Zucchini, shredded

  • 2 tsp Baking Powder

  • 1/2 tsp Baking Soda

  • 1/4 tsp Salt

  • 1/4 tsp Cardamom

  • 1 tsp Ginger

How to: Mix the oil, egg, kefir, sugar and eggs. Add in all the other ingredients. I am not baker, I do not do come up with recipes that require a strict step by step. So just toss it all in and make sure it is really mixed well and you should be fine. Scoop into a muffin tin. Make each muffin heaping, they won’t expand much so you can really load them up over the fin top line. Bake at 325 for roughly 25 minutes, more or less depending on size and oven. Let sit out for a night, then wrap them up and refrigerate, if you have any left!
