Brown Rice & Almond Butter Waffles

Brown Rice & Almond Butter Waffles

These waffles are ready to take your body where it needs to go! They have the nutrition to last the long haul with added energy providing carbohydrates from brown rice and satisfying fats from almond butter, these waffles are great for before and during an endurance workout.



  • 3/4 cup pancake mix (I used Bobs RedMill GF)

  • 1 tbsp coconut oil - melted

  • 1/2 cup milk (any)

  • large pinch salt

  • large pinch cinnamon

  • 1 tsp vanilla

  • 1 tbsp almond butter

  • 1 egg

  • 1/2 cup leftover / cooked plain brown rice

  • Maple syrup (optional….)

How To:

Whisk all ingredients together well. Ladle scoops into your waffle maker and cook according to your machine’s directions. Pour on syrup and devour a few. Wrap up the rest in foil and stash them on you for the journey.
