Early Autumn is when the air begins to chill and girls everywhere get excited over boots and pumpkins. Its also a great transition time for food. Salads go from refreshing and cooling to needing some substance without being quite ready for full on roasts and stews. 

This meal is full of fall flavors and will ease you into a winter eating style without sacrificing your summer clean eating style. 

 

Ingredients: (2 salads)

+ 2 cups shredded Brussel Sprouts
+ 2 cups Butternut Squash, roasted
+ 1/2 cup Blackberries, halved
+ 1/2 cup Feta, crumbled`
+ 1/4 cup Pecan Pieces
+ 4 Slices uncured Bacon
+ 1 cup steamed Beets (or beet kraut!

Serve with this DRESSING

Forget buying pre-shredded brussels, just run them through your food processor!

Instructions:

Pour your dressing over the brussel sprouts and let sit. Meanwhile, heat a skillet and cook your bacon until nice and crisp. Remove from pan and pat with paper towel to remove excess grease. Divide all ingredients into two bowls.
