Cantaloupe Salad

Confession. I hate cantaloupe. Okay, hate is a strong word… but in the last 6 years of dating my fiancé, I have never bought one or consumed one. I just dislike melons in general. But I tell my clients all the time to ‘get over it’ (in a nicer, more motivating way…) when they say they don’t like a fruit or vegetable. We aren’t toddlers, we shouldn’t be so picky. While you don’t have to like every type of produce, you can at least try to expand your preferences. So I am taking my own advice and trying to get over my dislike of melon.

This salad is wonderful for a light summer meal or as a side dish to bring to any cookout.

Ingredients:

1/2 cantaloupe, chunked

1 avocado, diced

1 pint cherry tomatoes, halved

2 cups microgreens

1/2 cup almonds, chopped

3 tbsp olive oil

1 tbsp white balsamic vinegar

1 tsp course ground sea salt

1/2 tsp chipotle chili flakes (more if desired)

*Optional - 1/2 cup crumbled goat cheese

Toss everything together & enjoy! If not consuming right away, do no add salt until last minute and chill until ready to eat.
