Carrot Coconut Cookies!

These could be breakfast, ride cookies, snacks, or dessert. Whatever. They are tasty, all natural, easy to make and not too sweet.



  • 1/4 sunflower seed butter

  • 3 tbsp coconut oil, melted

  • 1 egg

  • 1/3 cup coconut sugar

  • 1/2 tsp each ginger, cinnamon, nutmeg, salt

  • 2 carrots, shredded

  • 1/3 cup shredded coconut

  • 1 tsp vanilla

  • 1 1/4 cup oats (I used gluten free sprouted oats)

  • 1 cup gluten free flour (I used Pamelas)

  • 1 tsp baking soda

How to:

Whisk together the sunflower butter, egg, oil, vanilla, sugar, salt and spices. Add in the remaining ingredients and mix together well. Use your hands or a cookie scoop to form balls and place on a baking sheet lined with parchment. Gently press down the balls to flatten. Bake at 350 for 10 minutes. Enjoy!
