Coconut Quinoa Bowl

Coconut Quinoa Bowl

Ingredients: (2 servings)

+ 1 cup cooked Quinoa
+ 1 Avocado
+ 1 Banana
+ 4 tbsp Gogi Berries
+ 4 tbsp Shredded Coconut
+ 1 cup Micro Greens/ Sprouts
+ 1/4 cup Almonds, roughly chopped
+ 1" chunk Ginger
+ 1/2 tsp sea salt

+ 1 tsp vanilla extract
+ 1 tbsp coconut oil
+ 1 cup Coconut Milk  (or almond)

Instructions:

Melt the coconut oil and blend it with the extract, salt, ginger, and coconut milk.

Toss all the remaining ingredients together. 

Pour the dressing over. 

Enjoy!
