Collagen Cookie Dough

There are two types of people in this world; those who like cookies in raw dough form and those who like them baked. 

I am a raw dough girl. 


Of course, that's 'bad'. For one, there is valid health risks associated with eating raw eggs. Secondly, well it's just not healthful to consume gobs of cookies (dough or cooked!).  While I don't suggest this be a staple of your diet... sometimes it's nice to have a treat. 

These cookie dough bites are safe for raw consumption and have a little nutrition boost by the addition of collagen peptides. Let's face it, adding collagen to anything makes it instantly healthy right? ... Maybe not, but it definitely doesn't hurt. I choose Vital Protein's Collagen Whey Protein to add which provides protein (appetite satisfier/ muscle repairer) & collagen (joint health)  to the cookie carbs, making it a more balanced bite.

+ 1/2 cup Almond Meal
+ 1 cup AP GF Flour
+ 1/2 cup Grassfed Butter, softened
+ 3 tbsp Maple Syrup
+ 1/2 tsp Salt
+ 1 tsp Vanilla Extract
+ 2 scoops Vital Protein Coconut Whey
+ 1/2 cup Mini Chocolate Chips

How To:

Mix all ingredients together until a dough forms. Refrigerate. Once dough is firm, roll into balls or discs... or just eat with a spoon!
