Creamed Kale

Creamed Kale

Kale is the golden child of clean, nutritious eating. But that version of kale can be absurdly hard to digest; which is a great reminder that just because a food is healthy on paper, does’t mean its right for your body! However, cooking the kale helps break down those tough fibers, making it easy for the stomach to handle. It also is a way to transform this uber healthy ingredient into a comfort food experience. This makes a great side dish to a grass fed steak, or mix in brown rice or squash for a hearty vegetarian meal.

Ingredients:

  • 2 bunches Dino Kale, shredded

  • 4 cloves Garlic, minced

  • 2 tbsp Butter

  • 2 tbsp Heavy Cream

  • 1 tbsp Tamari

  • 1 tsp (a good squeeze) Lemon Juice

  • 1/4 tsp Pepper

  • 1/2 tsp fresh grated Nutmeg

  • 1/4 cup Tamari Almonds, chopped

  • 2 tbsp Cream Cheese

How To:

Melt the butter in a large saute pan over medium heat. Add the garlic and stir frequently for a minute. Add the shredded kale and saute for a few minutes until the kale is wilted. Add the remaining ingredients and stir to combine well. Saute another couple minutes stirring frequently. Add additional salt if needed. Serve warm!
