Crispy Chicken

Remember Shake 'n' Bake?  By that I mean, remember choking down the bland, dry chicken your mother made in middle school? Maybe that was just my experience... but it was a bad one; both unhealthy + unappetizing, and left me hating (really, HATING) the idea of making a breaded chicken recipe ever in my adult life. Until I was strolling through the aisles of Whole Foods and came across a new ingredient and I caved hard.


Chickpea crumbs! 

Obviously these had to go into my cart. But what to use them on? Somehow chicken 'breading' was the first thing that came to mind.  Try this out for yourself for a much tastier + nutritious way to serve up some crispy coated chicken.

+ 1 Egg
+ 2 Chicken Cutlets (or 1 large breast pounded flat)
+ 1 cup Chickpea Crumbs 
+ 1 tbsp Herb Seasoning blend of choice (I like this one)
+ 1 tbsp Olive Oil


In a small bowl whisk your egg. In a separate bowl, combine the crumbs and seasoning. Heat the oil in a skillet. Dip your chicken in the egg to coat fully, letting any excess drip off. Dip into the crumb mix and completely coat the chicken. Add to the hot pan. Repeat with remaining chicken. Cook until golden, flip to crisp the other side. Depending on how thick your chicken is, reduce heat and let continue to cook through.
