Chipotle Maple Dressing

It’s raining and 50 degrees out today… meaning, I got to wear a sweater!! And leggings. So basic and I love it because it’s officially #sweaterweather season! Which happens to be the same as squash season which I equally love and celebrate by eating roasted butternut squash from now until March. It’s my absolute favorite. Sometimes I use maple, or chili flakes, or balti seasoning, or chunky black pepper… but this time I decided to keep it simple. Roast it plain in coconut oil to keep it more versatile. Which is great to toss in anything all week.. but not great because, well, its plain… so I went for a different approach.

Enter: homemade dressing.


This Chipotle Maple Dressing combines all my favorite things, creaminess, smokiness, spiciness…. its good. Pour it over your squash or rice/ salad/ roast chicken/ potatoes/ eggs… you get the idea.


  • 1/4 cup Olive Oil

  • 2 tbsp Chipotle in Adobo (or to taste depending on spiciness desired)

  • 1 tbsp Maple Syrup

  • 3 tbsp Apple Cider Vinegar

  • Juice of 1/2 an Orange

  • 1.5 tbsp Almond Butter

  • 1 clove Garlic

  • Pinch of Salt

Blend it all until creamy. Use it up or store in the fridge until later.
