Life on the road is great for experiencing new ways to get creative with healthy eating… but not the best time to post new recipes. So I’m pulling one from my book ‘30-Day Whole Food Cookbook & Meal Plan’ to share with you guys!

Grains and sweet potato provide a healthy base for the bright, peppery, flavors of fresh green beans and arugula. This is a bowl that is crunchy, creamy and completely delicious!

Ingredients: Serves 2-4

  • 2 cups Sweet Potatoes, diced & roasted

  • 2 cups Green Beans, trimmed

  • 2 cups Arugula

  • 1 cup Cooked Grain of choice ( I like using quinoa )

  • 1/2 cup Pesto (I have a peppery pesto recipe in the book!)

  • 1 Tomato, sliced

How to:

In a large skillet over medium heat, combine all the ingredients except the tomato for roughly 5 minutes, stirring frequently. Add the tomato and serve!
