Green Onion Tofu Bowl

Need a winter bowl that is super satisfying without being heavy?

This meal is packed with bold flavor, color and nutrients but contains nothing to weigh you down.


Ingredients: (serves 2)

  • 1 small Butternut Squash, peeled & cubed

  • 1 block Sprouted, Firm Tofu, cubed

  • 2 cups Purple Brussels Sprouts, shaved

  • 4 Green Onions, sliced

  • 1 tbsp coconut oil

  • 2 tbsp Harissa (I use Mina Harissa - Red/ Spicy)

  • 2 tbsp Raw Pumpkin Seeds

How To:

Combine the squash, tofu, oil and harissa in a baking dish. Add a sprinkle of salt. Roast at 375 for ~35 minutes, stirring once or twice, until squash is tender and tofu is golden. Toss this with the remaining ingredients, add additional salt if desired and serve.
