Gypsy Salad

Gypsy Salad

Gypsy's wander, love and want it all. This salad is my summary of gypsy life in salad form as it has a little bit of all the fabulous things.

 

Ingredients: makes 2 mega salads
+ 4 cups Organic mixed greens
+ 2 cups Cabbage, shredded
+ 4 tbsp Spanish Roasted Almonds, chopped (or not)
+ 4 tbsp Sprouted Watermelon Seeds
+ 1/2 cup Edamame, shelled
+ 2 Persian Cucumbers, thinly sliced
+ 1 large Yellow Carrot, thinly sliced
+ 1/4 cup Coconut, shredded
+ 2 Scallions, thinly sliced
+ 1/2 cup Steamed Beet, shredded
+ 1/2 cup Onion Sprouts

Drizzle with a spicy sriracha or creamy cucumber dressing. 
 

Instructions:

Split everything between two bowls (or make 4 smaller salads....)
