This spicy harissa soup is perfect to warm the body after a long chilly ride.
+ 1 can Crushed Tomato
+ 6 Carrots
+ 1/2 Yellow Onion
+ 36oz Vegetable Broth
+ 6 Dates, pitted
+ 1 tbsp Harissa (more to taste)
+ 3 cloves Garlic
Chop the carrots and onion into large chunks. Combine all ingredients into a crockpot and turn on low for 6+ hours. Use an emersion blender to puree the crockpot contents. Or pour into a blender to puree (blend hot contents w/ caution!). Serve with chopped peanuts, yogurt, or mint.
