Healthified Mac 'n Chz

Cold days make us crave warm things. Occasionally these cravings are to eat comfort food; warm, gooey, cheesy, greasy, rich, satisfying comfort food. While in small doses, a little comfort food is good for the soul, most of the time this style of food is served in excessively large portions. Eating too much of these foods will work against promoting a healthy, fit body. 

Luckily most comfort foods can be 'healthified'. What is healthifying? This act refers to modifying the original recipe in a way that results in a healthier, more nutrient dense dish. This can be done by reducing calories, but that usually comes with little satisfaction and including processed 'diet' foods. Instead, focus on upping the nutrients supplied by adding more fiber, vegetables, protein and complex carbs. 

How was this Mac 'n Chz healthified?

- Used Banza pasta over standard variety for protein and fiber.

- Added nutrients without sacrificing creaminess by using FAWEN's sweet potato soup.

- Subbed chickpea crumbs for bread crumbs to increase fiber and protein.



+ 1 box BANZA pasta, any shape
+ 2 tbsp Butter
+ 2 tbsp GF flour
+ 6oz Shredded Cheese Blend
+ 1 FAWEN sweet potato soup container
+ 1/2 Onion, diced
+ 4 cloves Garlic, minced
+ 4 tbsp Fresh Sage, chopped
+ 1/4 cup Parmesan, grated
+ 1/4 cup Chickpea Crumbs


Boil pasta for 5 minutes. Drain and set aside. Meanwhile, add onions and butter to a dutch oven (if you do not have one, use a deep skillet and transfer to baking dish later). Over low heat, sweat the onions until tender. Add sage and garlic. Continue to sauté the mix for several minutes. Add the flour, stirring well to coat everything and provide a thicker base. Add in the soup, pasta and cheese. Stir well to combine. Sprinkle the chickpea crumbs and parmesan over the top. Bake at 350 for ~25 minutes. Season with additional salt and pepper.
