Honey Miso Veggies

Yessss, I mean, don’t we all?

So give this simple recipe a try.

Ingredients:

  • 2 Zucchini - chunked

  • 2 Summer Squash - chunked

  • 4 Scallions, sliced

  • 2 tbsp Miso

  • 2 tbsp Coconut Oil

  • 1 tbsp Honey

  • 2 tsp Coconut Aminos

  • 1 tbsp Sesame Seeds - optional

How To:

Toss the squash, zuc and oil in a pan and saute over medium heat until the veggies are tender. Add in the miso, honey and aminos. Allow the veg to cook a few additional minutes, depending on if you prefer them more ‘raw’ or charred. Remove from the pan and toss in the scallions and sesame seeds. Enjoy! I suggest serving this with fish and quinoa or add cubed tofu in the pan for a full on vegetarian meal.
