Kuri Porridge

Oatmeal bores me. I'm not saying its bad, It just isn't very exciting or fun or even super delicious... But it is warm and comforting and satisfying. I wanted to make some fun porridge that I would be excited about eating! The main purpose would be to fuel my body before a long (88 miles!) and cold (low 30s!) bike ride, food is always more fun when you're excited about tasting it.... food is fuel, yes, but it also is fun!

When you need a break from boring oats, try this.

+ 1 1/4 cup Bobs Red Mill Mighty Tasty Hot Cereal (GF)
+ 1 cup Red Kuri Squash (or butternut or kobucha) diced & peeled
+ 1 cup frozen Strawberries, halved
+ 1/4 cup Coconut, Shredded
+ 1 tbsp Coconut Oil
+ 2 cups Elmhurst Milked Walnuts
+ 1.5 cups Water
+ 1/4 tsp Salt
+ 1 tsp Ginger
+ 1/2 tsp Cardamom
+ 2 tbsp Maple Syrup

How To:

I used an instapot here... If you don't have one, get one (its worth it!), or just simmer over the stove for a while.

Combine all the ingredients in your instapot. Stir. Cook on low pressure for 20 minutes. Scoop out and enjoy!

Add toppings like extra milked walnuts, maple syrup, cinnamon, or whatever you'd like to make this more fun!
