I want eggs! I want a bagel! I want salmon!
(me every Saturday morning)

Basically this is the ultimate brunch dish. Also, it takes pretty minimal prep and skills to make it awesome.

+ 2 Everything Bagels ( I used Canyon Bakehouse GF )
+ 1/4 cup Whipped Cream Cheese
+ 6 Eggs
+ 1/4 cup 2% Milk
+ 2 tbsp Capers
+ 4 tbsp Fresh Dill, chopped
+ 2 oz Smoked Salmon, sliced into thin strips
+ 1 Heirloom Tomato, sliced thin
+ 1 tbsp Everything Bagel Seasoning


Whisk together eggs, whisk, and milk in an oven safe bowl or baking dish. Cut the bagels in half, then quarters (8 pieces per bagel). Stir the bagel pieces into the egg mixture. Stir a few times to make sure the bagels have been coated. Cover and refrigerate for 1-2 hours (enough time to go for a run, ride your bike, or do some chores!). Retrieve the dish from the fridge and stir in the salmon, capers, tomato and cream cheese (spread little tabs throughout). Sprinkle with a bit of everything bagel seasoning. Heat your oven to 350 degrees. Add your dish to the oven and cook roughly 45 minutes, until your egg has set. If the exposed bagels begin to brown around 30 minutes, cover with foil and continue to bake. Cool slightly and dig in!
