NOOCH
Nutritional Yeast (NOOCH) is a dry, flakey, inactive yeast.
Sounds appetizing right?
You just have to try it to become a believer. It provides a savory, umami-ish, even salty taste to foods. Vegans claim it can replace cheese in any recipe, I'm less convinced of that... but I am convinced of its super nutritive properties. You can find this ingredient at most health food stores in bulk sections + spice areas, or order online.
NOOCH provides a complete protein, fiber, a large B vitamin profile (including being a vegan source of B12!), copper, manganese, magnesium, and zinc.
Here's my favorite way to use Nutritional Yeast:
Nutritional Rice
INGREDIENTS:
+ 2 cups cooked Sprouted Brown Rice
+ 2 tbsp Sunflower Oil
+ 4 tbsp Nutritional Yeast
+ 2 tbsp Sesame Seeds
+ 2 tbsp Hemp Seeds
+ 1 tsp Sea Salt
+ 1/2 tsp Garlic Powder
+ 1/2 tsp Coarse Black Pepper
+ 1 tbsp Bee Pollen
INSTRUCTIONS:
Stir all ingredients into the rice. Eat on its own for a flavorful and nourishing simple meal, or use as a side dish or base to any recipe calling for rice!
Meal Idea:
Add shredded golden beet and baby spinach to this rice. Sauté until spinach is wilted and top with a poached egg for a delicious and complete meal!
