Paprika Broccoli Salad

i love broccoli salad. It's hands down my fav ‘deli’ style salad. Of course, it can be a bit…fatty and sugary, so I tried to improve those aspects a bit as well as put a unique spin on the average broccoli salad in this version.



  • 4 cups broccoli cut into bite sized pieces.

  • 1/4 red onion sliced thinly

  • 1/4 cup golden raisins

  • 2 tbsp sunflower seeds

  • 2 tbsp pumpkin seeds

  • handful fresh parsley, diced

  • 4 slices uncured bacon, cooked & chopped

  • 2 tablespoons vinegar - I used rice

  • 1 tablespoons maple syrup

  • 1/2 cup mayonnaise - I used an avocado based kind

  • 1/2 tbsp smoked paprika

  • 1/2 tsp coarsely ground pepper

  • Salt to taste

How To:

In a large bowl, whisk together the vinegar, maple syrup, mayo, salt, pepper and smoked paprika. Stir in all the remaining ingredients. If you are making this ahead of time, leave out the salt and salt just before you consume the dish. I love eating this with grilled chicken or tossed with quinoa.
