Gazpacho is the perfect meal to chill off on hot, sweaty days. It is light, refreshing, vibrant and nourishing. And... super simple to make!!
This chilled soup is sweet, spicy, rich in lycopene and perfect on a hot summer day. There is little prep work and no cooking involved so there is no excuse not to make a healthy dish like this even on a super busy day. You can even make this in advance and keep refrigerated for future enjoyment :)
Ingredients: (for 2 meals / 4 sides)
+ 1 red bell pepper
+ 1.5 c pink tomatoes
+ 1 shallot
+ 2 peaches
+ 4 Tbsp white balsamic vinegar
+ Pinch of salt
+ Coarsely ground black pepper
+ 1/2 lemon, juice
+ 1 tbsp olive oil
+ Handful of ice cubes
+ Fresh basil
Roughly chop (and remove pits from) your fruits and vegetables.
Add all ingredients except black pepper and basil to a blender or food processor.
Blend until smooth. Pour into bowls (or glasses for sipping!). Garnish with the pepper and basil. ENJOY!

**Add quinoa, rice, or pasta for more of a complete meal! I used fresh, gluten free spinach pasta in mine. Delish!
