Popped Lotus Bars

Who doesn’t love a little treat? I know I do!!

I wanted to make something slightly sweet and slightly nourishing. These bars ended up being both those things in a completely binge worthy bite. Seriously, I had to give them away before I ate the entire batch. You’ve been warned.

Make these and share them at holiday parties to impress your friends & co-workers!



  • 1 bag Atlas Provisions Popped Lotus chocolate sea salt flavor

  • 1 cup Gluten Free Brown Rice Cereal

  • 1 cup Tahini

  • 3 tbsp Coconut Oil

  • 1/3 cup Honey

  • 1/3 cup Dried Cranberries

  • 1/3 cup Chocolate Chips

  • 1/3 cup Raw Sunflower Seeds

  • 1/2 tsp Coarse Sea Salt (or to taste)

  • 1/2 tsp Cinnamon

  • 1/4 tsp Cayenne (optional)

First, line a small baking or brownie pan with foil. In a saucepan, combine the tahini, honey, cinnamon, and coconut oil (& cayenne if using). Stir to combine and melt together. Meanwhile, toss the other ingredients into a large bowl. Once the tahini mixture is combined, stir it into the bowl of dry ingredients. Stir quickly and well to combine. Dump the mixture into the pan and firmly press it down. Very firmly! Cover with plastic wrap and refrigerate for at least an hour. Remove and cut into squares!
