Raw Cacao Brownies

I've got that chocolate craving!!!

Okay I always have that chocolate craving... These 'brownies' are amazing for satisfying my sweet tooth while providing super nutrients. 



+ 1/2 cup raw pecans
+ 2 cup dates, pitted** (soaked in warm water ~10 min)
+ 1.5 cup cashews
+ 1/2 cup cocoa powder
+ 2 tbsp almond (or coconut) milk
+ 1/2 tsp sea salt

+ 1 tsp vanilla extract
+ 2 tbsp coconut oil

+ 3 tbsp brown rice syrup
+ 2 tbsp coconut oil
+ 1 tsp vanilla extract
+ 4 tbsp cocoa powder



Drain and roughly chop the dates. Place the brownie ingredients in a food processor and pulse until smooth (or smoothish for a little texture). Firmly press the mixture into a parchment lined baking pan. Place into the refrigerator to set. 

Melt the coconut oil and whisk together with remaining frosting ingredients until smooth. Spread over the brownies. Return to fridge for a couple hours at least to firm up.

Cut into pieces or giant squares... and ENJOY!
