Shaved Raw Autumn Salad

Hooray for fall food!!!! But who else is already over the PSL? I have one at the start of fall each year and that swiftly gets it out of my system. I can now move on to better things. While it is easy to get excited about the seasonal change in eating, I’m not quite ready to turn the oven on for full time roasting. Enter this shaved salad. It is earthy and the colors remind me of leaves falling to the ground. But it is so light and refreshing at the same time. I highly recommend getting a mandoline slicer as they make consuming and preparing raw veggies much easier.


Eat this salad on its own of as a side dish.


Ingredients: Serves 2-4

  • Dressing

    • 1 tbsp Sunflower Seed Butter

    • 4 tbsp Olive Oil

    • 2 tbsp Red Wine Vinegar

    • 1 tbsp Maple Syrup

    • 1/2 tsp Turmeric

    • Salt & Pepper to taste

  • Salad

    • 1 Golden Beet

    • 2 Carrots

    • 1 Apple

    • 1/2 bunch Curly Parsley

    • 1/4 cup Almonds

How to:

In a large bowl, whisk together all the dressing ingredients. Shave all the fruit and vegetables thinly using a mandoline slicer. Chop the almonds and leafy bits of parsley. Toss everything together well. Serve alone or with rice and chickpeas or chicken…
