Spicy Watermelon + Cucs
This salad is refreshing and extremely hydrating and loaded with phytonutrients. It’s perfect when you need a big healthy bowl of food with only a handful of ingredients. Serve it along side grilled fish or burgers for a lighter, fresher side dish option.
3 cups watermelon, diced
6 cups cucumber, sliced
4 scallions, sliced thin
1 jalapeno (more or less to taste), sliced thin
2 tbsp coconut aminos
2 tbsp apple cider vinegar
handful cilantro leaves
*optional - top with GoRaw lime snacking seeds
Toss everything together and serve.
