Breakfast Eggs

Need an easy but exciting breakfast? 

Right now, this is definitely favorite of mine.

aving leftover baked squash on hand is key to making this an easy meal! 


Ingredients: (2 Servings)

+ 5 Eggs
+ 1 cup Squash, baked/cubed
+ 1/2 tsp Coconut Oil
+ 1/2 cup Herbs (Thai basil, parsley, chives)
+ 1/4 cup Aged White Cheddar
+ Chipotle Pepper Flakes (to taste)
+ Salt (to taste)

How To:

Heat the coconut oil over medium heat. Add the eggs and scramble. Once the eggs begin to set, add the squash and cheese. Scramble until eggs are set. Season and top with herbs. 

*This also makes a great filling for a burrito! Stuff wraps with this filling, wrap in foil, and freeze for later!
