Squash Noodle Salad

This salad can be tossed together without too much effort, which is what summer eating is all about: fresh, light, colorful, simple, and tasty! 


+ 2 cups Squash Noodles (Spiralized Butternut Squash)
+ 2 Peaches, pitted/diced
+ 1/2 cup Feta, crumbled
+ 2oz Uncured Salami slices, cut into thin strips
+ 1/2 cup Pickled Red Onions
+ 4 cups Purple Kale
+ 1/4 cup Brianna's Blush Wine Vinaigrette
+ 1/4 cup Sprouted Watermelon Seeds


Massage the dressing into the kale. Divide into two bowls. Add in all other ingredients and toss. 

Need more? Add grilled chicken or sprouted brown rice!
