It is officially summer!! YAY!
Summer is a time when appetites naturally decrease due to warmer temperatures and days being outside enjoying life and generally not thinking about food. These days make me crave simple options that are nourishing, but lighter and require less time in the kitchen. Avocado toasts are great…. but a bit played out, am I right?! So enter peach toast! These were created during a recent trip to North Carolina where local peaches were for sale everywhere.
2 slices Rye Toast, I used Canyon Bakehouse
2 tbsp Cream Cheese, I used Nancy’s Probiotics
Handful Alfalfa Sprouts
1/2 Peach, sliced
4 ounces Salmon (you could use smoked, I used a leftover grilled filet)
Sprinkle of bagel seasoning
Toast the bread, spread on the cream cheese and sprinkle with seasoning. Top with the peaches, salmon and alfalfa. Enjoy!!
