SuperGreen Energy Bites

These bites are my favorite treats to have on hand. They are great for fueling me through a busy workday or a workout!  This variety was made to include some super green supplements I had in the pantry: SunFood SuperGreen Blend & Spirulina Crunchies. 



1 cup Rolled Oats
1 cup Raw Cashews
1 cup Dates, pitted
1/3 cup Shredded Unsweetened Coconut
3 tbsp SunFood SuperGreen
2 tbsp SunFood Spirulina Crunchies
2 tbsp Coconut Oil
1 tsp Vanilla Extract
1/2 tsp Sea Salt

Pulse the dates until they are very broken up, almost until a paste forms. Add in the salt, oats, coconut, and cashews. Pulse until everything is broken up. This might take some scrapping down and continued pulsing. Add in the remaining ingredients and pulse again until everything is combine and finely broken up. 

Transfer the mixture to a bowl and use your hands to 'kneed' the mixture until it really starts to stick together. It will be a bit crumbly at first, but the coconut oil will warm and begin to hold together as you work it with your hands. 

Take chunks and roll into balls. Size is up to you! 

Devour a couple immediately and put the rest in a container in the fridge.
