Weeknight Pasta

To me, pasta is a weekend meal. It's typically heavy and carb rich which is great on the weekend when I do most of my more intense and long workouts, but more than my body needs most other days. A good, clean, delicious pasta dish also takes time and attention which most of us lack on busy weeknights. 

So next time its getting late on a Tuesday and you're craving some pasta... Try this recipe. 

Check out these two labels. The pasta I use is on the left, in green is 'normal' spaghetti.  

INGREDIENTS: (serves 4...or 2...)

+ 1 box Red Lentil Linguine
+ 4 tbsp Olive Oil
+ 1/4 cup Sun Dried Tomato, chopped
+ 1/4 cup Marcona Almonds, chopped
+ 1/2 tsp Black Lava Salt
+ 1 bunch Laciana Kale, chopped
+ 1/3 cup Parmesan, grated (optional)



Cook the pasta in salted boiling water until al dente. Drain, reserving just a bit of the water (maybe 1/4 cup) in the pot with the pasta. Add in the oil, kale, tomatoes, salt and almonds. Stir over medium heat until the kale is wilted. Divide into bowls and top with the parm. 


**Since this pasta is so rich in protein, you do NOT need to any extra. This is a complete meal.
