This is an awesome meal for providing clean, hearty substance.
Ingredients: (for 2)
+ 2 cups Kale, Chopped
+ 1 cup Buckwheat, cooked
+ 1 tbsp Coconut Oil
+ 1 Golden Beet, small dice
+ 1/4 cup BBQ Sauce (as natural as you can)
Add the coconut oil to a skillet and heat over medium low. Add the diced beet. Cook slowly until tender. Once tender, add the kale to wilt and remove from heat. Mix the BBQ sauce into the cooked buckwheat. Divide into two plates and serve with the beets and kale.
If you'd like, keep the kale raw and toss with a creamy dressing.
