Sometimes vegetables need a punch of flavor to liven up your palate. 


+ 1 Head Cauliflower
+ 2 tbsp Coconut Oil
+ 2 tbsp Curry Powder
+ Salt


Heat oven to 350. Add coconut oil to a baking dish and place in the oven to melt. Meanwhile, trim your cauliflower head. Add florets to the baking pan. Toss to coat with oil. Sprinkle on curry powder, tossing the vegetables to coat semi-evenly. Sprinkle with salt and bake until tender.

These make a great side dish on their own, but I love them in the pictured combination of brown rice, caramelized onions, cashews, raisins and herbed chicken.
