CrockPot Chicken

Winter = short days, busy schedules, less training...

For me this means leaner meals in a hurry. This one is simple to prep and done when you get home. Enjoy.

Ingredients: (for 2 large salads)
+ 2 Oranges, quartered
+ 4 Scallions, chopped
+ 1/2 cup Orange Juice
+ 1/4 cup Sherry Vinegar
+ 1 Red Onion
+ 4 Tbsp Honey
+ 1 Tbsp Sesame Oil
+ 1 Tbsp Ginger Juice
+ 1 Tbsp Graham Marsala
+ 1/2 cup Water
+ 1.5 pounds Chicken Thighs



Toss everything in the crockpot. Give it a nice stir. Put the lid on and set for 6 hours on low. When done, scoop out the chicken, shred, and use in a variety of ways. Toss the remaining crockpot ingredients/juice.
