Eating healthfully does necessarily mean nibbling on raw carrots. There are always times when it is appropriate for active individuals to consume larger, more dense meals. The trick is upping the caloric density without sacrificing nutrient density.
+ 4 tbsp Green Curry Paste
+ 1 can Light Coconut Milk
+ 1 tbsp Coconut Aminos or Tamari
+ 4 tbsp Fresh Basil, chopped
+ 1 tbsp Ginger, grated
+ 3 Carrots, shaved
+ 4 Kale Leaves, chopped
+ 1/4 cup Coconut, shredded/unsweetened
+ 1 Onion, sliced
+ 2 tbsp Coconut Oil
+ 1/2 pound Stir Fry Beef
+ 1/4 cup Raw Peanuts, chopped
In a large wok or sauce pan, simmer the onion and carrot in the coconut oil over medium heat. Stirring frequently as to create a tender, but not charred vegetable. Once tender, stir in the kale. Remove the vegetables from the pan and set aside. Add the curry paste to the pan and whisk in the coconut milk. Simmer on low heat. Add in the ginger, soy/aminos, shredded coconut and basil. Let simmer for ~5 minutes. Add the vegetables back in along with the beef. Continue simmering and stirring until the beef is cooked, 5-10 minutes depending how you prefer your red meat doneness. Garnish with chopped peanuts.
Goes great over rice or noodles!
