Marinated Mushrooms

These are a great addition to any meal. I love to make a batch and take handfuls from here and there to enhance different dishes. Toss into salads, rice bowls, or eat alone as a healthful snack. 

+ 1 pound Cremini Mushrooms, cleaned and trimmed (half the large ones)
+ 1/4 cup Olive Oil
+ 1/4 cup Sherry Vinegar
+ 1/4 cup White Balsamic Vinegar
+ 1/4 cups fresh Parsley
+ 1/2 Red Onion, diced

+ 1 tbsp Garlic
+ 1 tbsp Pink Peppercorns
+ 1/4 cup Warm water
+ 1 tsp Salt


Fill a pot with water and let boil. Add mushrooms and simmer for ~5 minutes until tender. Meanwhile, add all other ingredients to a large jar. Once the mushrooms are done, drain and add to the jar with the other ingredients. Let cool. Cover and refrigerate. Use as you want!
