Proof that a vegetarian dish can be completely satisfying.
This is a flavorful, natural meal combination that will leave you satisfied and well fueled. Sweet potatoes are the perfect food for endurance athlete, natural carbohydrates, potassium, fiber, and even a little protein! Kale is a no brainer when it comes to health…but you are likely less familiar with miso. Time to change that! It is a rich, flavorful fermented soy paste that will add depth, flavor and nutrition to any food.
This is an unusual, but delicious meal.
+ 1 large Sweet Potato – I love using Japanese purple sweets, but any will do.
+ 1 cup Kale, shredded
+ 1 tbsp Butter – preferably grass fed
+ 1 tbsp Tamari
+ ½ tbsp Sesame Seeds
+ 1 Tbsp White Miso paste
Heat oven to 375. Score the potato with a knife. Wrap it tightly in foil and bake for ~45 minutes until tender. Remove from the oven and set aside. In a skillet, heat the butter with tamari and miso. Stir to combine as the butter melts. Add the kale. Sauté until wilted. Top sweet potato with the miso kale and sprinkle with sesame seeds.
Serve with basmati rice for extra carbs or grilled chicken for more protein.
