This chilled soup is sweet, spicy, rich in lycopene and perfect on a hot summer day. There is little prep work and no cooking involved so there is no excuse not to make a healthy dish like this even on a super busy day. You can even make this in advance and keep refrigerated for future enjoyment :)
Ingredients: (for 2 meals / 4 sides)
+ 1 red bell pepper
+ 1.5 c pink tomatoes
+ 1 shallot
+ 2 peaches
+ 4 Tbsp white balsamic vinegar
+ Pinch of salt
+ Coarsely ground black pepper
+ 1/2 lemon, juice
+ 1 tbsp olive oil
+ Handful of ice cubes
+ Fresh basil
Roughly chop (and remove pits from) your fruits and vegetables. Toss into your food processor or blender (I use a Ninja) along with the lemon juice, ice, salt, vinegar, oil, and ice. Blend until smooth. Serve chilled and garnish with the pepper and basil. ENJOY!
**Add quinoa, rice, or pasta for more of a complete meal! I used fresh, gluten free spinach pasta in mine. Delish!
