Okay that might not actually happen... but for those of us who enjoy pumpkin spice (not in lattes!) but do not want to be labeled as a 'basic bitch' here is a winning recipe. Enter Pumpkin Spice Granola!!!
It's easy to make yourself and can be used to make a variety of meals, or just eat it as a snack.
+ 1.5 cup Old Fashioned Oats
+ 1 cup Pecan Pieces
+ 1/2 cup Almonds, slivered
+ 1 cup Pumpkin Seeds, raw
+ 1/4 cup Maple Syrup
+ 1/4 cup Coconut Oil, melted
+ 1/4 cup Pumpkin Puree (not canned pie mix)
+ 1 tbsp Pumpkin Pie Spice Mix
+ 1 tsp (or more) Salt
+ 1/2 cup Coconut shreds (unsweetened)
+ 1/2 cup Cranberries, dried
+ 1 tsp Vanilla extract
Heat oven to 350 degrees. Line a baking sheet with parchment paper. Mix all dry ingredients in a bowl. In a separate bowl, mix together the melted coconut oil, pumpkin puree, vanilla, and syrup. Now, stir both the wet and dry ingredients together. Spread onto the baking sheet and bake for ~10 minutes. Remove, stir, and return to the oven for another ~10 minutes. Cook longer for a crunchier mix or take out early for a softer texture.
Obviously, you can just eat this as is for a crunchy munchy snack...
Add chocolate chips to it for extra snack power.
Top with yogurt and sliced banana for breakfast.
Serve over baked sweet potato with yogurt for a carb rich (vegan/gluten free) meal to fuel your body for endurance activities.
Sure you can use pumpkin pie spice, but look for one with no 'extra' junk in it. We do not need added colors or preservatives clogging up our bodies!! Or.... just mix your own version with spices you likely have in your pantry already: ginger, nutmeg, clove, allspice and cinnamon.
