This is a great combination for a flavorful, healthful meal.
+ 2 cups Mushrooms, sliced
+ 2 tbsp Sherry Vinegar
+ 2 tbsp Olive Oil
+ 2 tbsp Fresh Tarragon, chopped
+ 1/2 tbsp Garlic, minced
Saute the mushrooms over medium-low heat with the oil until tender. Add the vinegar. Stir frequently, letting the mushrooms become slightly golden. Add in the tarragon, garlic, salt and pepper to season. Saute another minute to meld the flavors. Remove and serve.
These make a great side dish on their own, but I love them in the pictured combination of red rice, walnuts, and green beans.
