I love this for meal for before a long ride.
Breakfast is the most important meal of the day, even if you eat it for dinner.
+ 2.5 cups Water
+ 1/2 cup White Grits
+ 1 tbsp Coconut Oil
+ 1/2 tsp Salt
+ 1 tsp (or more) Korean Chili Flakes
+ 1/2 cup White Cheddar, Shredded
+ 1 tbsp Coconut Aminos
+ 1/2 Jalapeno
+ 4 Eggs
+ Smoked Salt
+ Greens for serving
Bring water and salt to a boil. Slowly pour in your grits, whisking as you add them to the water. Turn heat to low and simmer roughly 15 minutes until tender. Stir in the coconut oil, salt and chili flakes. Add a touch more water if too dense. Simmer until soft.
Remove from heat and stir in cheddar and aminos.
Add the grits to serving bowls. Top with thinly sliced jalapenos, sprouts or other greens and the sliced avocado.
Cook your eggs to desired doneness (soft yolks are best for this dish). Add to your grits. Sprinkle with salt.
Cook a larger batch of grits if you please and use for another meal as they keep just fine in the fridge.
