These are pretty decadent. They also are made with whole, healthful ingredients. Eat one for breakfast on a super active day, or for dessert when you just need a treat.
+ 2 cups Quick Oats
+ 1 cup Quinoa, Toasted
+ 1/2 cup Freeze Dried Strawberries
+ 1/2 cup White Chocolate Chips
+ 1 tsp Salt
+ 1 tsp Vanilla Extract
+ 1 cup Peanut Butter
+ 1/4 cup Honey Roasted Peanuts, roughly chopped
+ 3 tbsp Coconut Oil
+ 3 tbsp Maple Syrup
+ 10 Dates, pitted/chopped
In a food processor or blender, combine the melted oil, dates, 3/4 cup of the nut butter, salt, vanilla, and maple syrup. Process the mixture until smooth. Transfer the mixture to a bowl with the oats, quinoa, and honey roasted peanuts. Use your clean hands to thoroughly mix this together. It should appear crumbly, but hold together well when really pressed. Prepare a brownie pan with parchment paper. Press 1/2 the mixture firmly into the bottom of the pan. In a small skillet, heat the remaining nut butter and white chocolate until melted. Pour the chocolate onto of the first oat layer. Top with crushed dehydrated strawberries and the additional oat mixture. Refrigerate to set, at least 2 hours. Cut into bars or squares.
